Iron Chili

I made up this new recipe because I was concerned I wasn't getting enough iron, but also because several women in my life are struggling with low iron levels. It turned out so yummy it shouldn't even be healthy. 


Ingredients:

1 lb of ground sirloin
Red onion (only cuz I couldn't find a white one in the house)
Seasonings (I measure with my heart):
Salt
Pepper
Garlic
Crushed red pepper
Chili powder
28 oz can crushed tomatoes (the organic no salt from Kroger has iron!)
1 - 14.5 oz can diced tomatoes
Beef Broth (I just filled the crushed tomato can) 
2 - 15 oz cans of lentils (rinse off the yucky bean juice)
1 bag of fresh spinach

*Brown the ground sirloin with onions and 1st layer of seasoning.
*Add both kinds of tomatoes; season again. Bring to a boil. 
*Add lentils. Taste to check seasonings.
*Return to a boil.
*Add spinach by handfuls
*One last check for seasonings.
*Turn the heat down and simmer for 30 minutes.
*Serve over elbow macaroni (check the box to make sure the one you bought has some iron!)

I didn't even put toppings on mine, and it was delicious. However, I could see it working well with my normal chili toppings of cheese and even a little sour cream.
