My Loaded Baked Potato Soup
Raven Kastner: this is our current potato soup. (this is another one of those recipes where Jami doesn't really measure) BASE: 1 bag frozen diced potatoes Some Minced onion 1 box chicken broth Pepper (salt if you don't have someone you love who has Meniere's disease) Toss that in your slow cooker on low two or three hours (because the potatoes are diced Frozen potatoes you don't have to cook them very long and if you want chunks of potato left you shouldn't cook them much more than 2 hours). The roux: (this is where I measure) On the stove-- 4 Tbsp butter -- melt it 1/4 cup flour -- let it cook a bit 1 1/2 cups heavy cream (or half and half or milk) -- let it mingle before next step 1/4 cup sour cream -- give it a bit Stir the roux into your slow cooker. Give it 30 more minutes. Toppings: Cheese Bacon Green onions
