Keto Enchiladas
I made a new lo carb recipe today. It was a crowd pleaser. Although full disclosure: I offered them some carbs (refried beans) to make it more palatable.
(It's not that pretty to look at, but it was yummy.)
Keto Enchiladas
3 pounds browned ground beef
3 pckgs taco seasoning (we like Chi chis)
2 cans of refried beans
2 large cans of enchilada sauce
8 cups of cheese

Brown ground beef and add taco seasoning.
Mix refried beans with a healthy splash of enchilada sauce and a fistful of cheddar.
Pour a layer of enchilada sauce into the bottom of a 9 x 13 pan.
Layer 1/2 of ground beef on top of the sauce.
Then layer 1/2 of bean mixture on top of meat.
Cover with enchilada sauce and cheddar.
Repeat layers.
Then layer 1/2 of bean mixture on top of meat.
Cover with enchilada sauce and cheddar.
Repeat layers.
Bake for 30 to 45 minutes on 350.
(I served these with sour cream and with tortillas for my carb loving kiddos.)
